Buddha Bowl Goodness
A great way to pack a ton of detox ingredients into your lunch or dinner is by creating a Buddha bowl, otherwise known as a bowl full of all things healthy and delicious. In this detox Buddha bowl, you can find all of the ingredients your body needs to help the inner cleansing process along: beets, fresh parsley, loads of garlic, some sesame seeds, avocado and of course a healthy dose of your daily greens.
|Trim down the roots and stems of the beet to around 2 cm and wash any dirt off. Place in a pot and cover with cold water, adding 1 teaspoon of salt. Boil until tender (around 45 minutes). Once done, strain, then rub off the skin with a clean tea towel and slice the beet.|
|Peel the potatoes and place them in a pot with salted water. Crush the garlic cloves and remove the skin, then add to the potatoes. Boil until the potatoes are tender, then strain.|
|Mash the potatoes and garlic, adding little splashes of almond milk until you reach the desired consistency. Chop the parsley and stir it into the mashed potatoes.|
|Wash the green beans, remove the ends and cut them into bite-sized bits. Boil them in water until tender (about 10 minutes).|
|Pour the tahini into a bowl, add 2 tablespoons of water, the lemon juice and salt. Mix until you have a creamy sauce. For a cheesy flavor, try adding a spoonful of nutritional yeast.|
|Wash and chop the spinach and place it in the bottom of the bowls. Top it with the mashed potatoes, cubed beets, red onion, and green beans. Add half an avocado to the bowl and top it with some sesame seeds and tahini.|
