Homemade Vanilla-Cinnamon Almond Milk

Ingredients


1 cup almonds (preferably organic and raw)

2.5 cups water (filtered or mineral water)

1.5 teaspoons pure vanilla extract

1/2 teaspoon cinnamon

Introduction

Plant-based milks are great to pair with some homemade granola, add to your oats or blend into your smoothies. Of course, they're are also super-healthy compared to dairy. Sadly, many store-bought varieties come with loads of (artificial) additives and chemicals, which you definitely want to avoid during a healthy detox. So why not make your own? This vanilla-cinnamon almond milk is completely clean, meaning it is free of all those unnecessary additives. As a bonus, it tastes amazing.

Preparation

Put the almonds in a container and cover them with water. Let them rest throughout the night. If you want your drink to be creamier, let them rest for 2 days.
Drain the almonds and rinse them with cold water. Discard the water you have used to soften them, as it may contain phytic acid, a substance that hinders the absorption of nutrients.
Put the almonds in a blender with 600 ml of water, the ground cinnamon and vanilla extract. Blend until smooth. The almonds have to be as much crushed as possible and the water should have a whitish color.
Line the strainer with cheesecloth or an opened nut bag and place it over a container or measuring cup. Pour the almond mixture into the strainer. Squeeze and press it to extract as much almond milk as possible, making the almond paste as dry as possible.
Adjust its sweetness with a bit of maple syrup if needed.
Transfer to a container. Seal it and keep it closed properly in the refrigerator for up to 2 days. If it separates, simply shake and stir it before use.
You can use the remaining almond pulp for smoothies or homemade granola. You can freeze it as well.
