Almond Crackers with Avocado Dip

Ingredients


1 cup almond meal

1 tablespoon ground flaxseed

2 1/2 tablespoons water

2 tablespoons sesame seeds

1 tablespoon pumpkin seeds

Sea salt to taste

Black pepper to taste

1/2 avocado

1 teaspoon onion (finely diced)

1/2 lemon (squeezed)

2 tablespoons coriander (chopped finely)

Introduction

If you're trying to eat healthier, store-bought crackers are some of the last things you want in your diet. They're full of unnecessary ingredients such as oil, salt, chemicals...nothing your body can use to maintain itself! Luckily, making your own healthy crackers is incredibly quick and easy. Pair them with a nice herb-enriched avocado dip for an incredible taste and more health benefits, and your healthy snack is ready to be devoured.

Preparation

Preheat the oven to 350 degrees F or 180 degrees C.
Make a "flax egg" by mixing the flaxseed with 2.5 tablespoons of water. Set aside for 5 minutes to let it thicken.
Add the almond flour, "flax egg" and a bit of salt and pepper. Stir until a dough starts to form.
Lay out a piece of parchment paper and put the dough on it. Then place a second piece of parchment paper on top. Flatten the dough and roll it out by using a rolling pin (or empty wine bottle).
Now add the sesame seeds and pumpkin seeds to the rolled-out dough. Try to spread them out evenly.
Use a sharp knife to cut the dough into crackers. Bake them in the preheated oven for 20-25 minutes until they are golden brown and baked through. You don't want your crackers to be soggy inside.
Let the crackers cool down while you prepare the avocado dip.
Add all the ingredients for the dip to a bowl (avocado, lemon juice, onion and coriander) and stir together well. You can adjust the amount of lemon juice for a runnier or thicker dip. It's up to you! Tip: Leave the avocado seed in the bowl with the dip. This will keep it from browning too quickly!
Serve the crackers with the dip immediately.
