Ingredients


1/2 cup baby spinach

1/2 cup lettuce

1/2 cup red cabbage

1 apple

1 carrot (grated)

2 tablespoons walnuts (raw)

2 tablespoons pumpkin seeds

1 tablespoon lemon (squeezed)

3 tablespoons tahini paste

1.5 tablespoons water

3/4 tablespoon pure maple syrup

1 tablespoon ginger root (minced)

Black pepper to taste

Sea salt to taste

Introduction

Every once in a while, a great big vitamin boost is exactly what you need. What better way to get that than by making yourself a huge rainbow salad? This salad is packed with healthy leafy greens along with a wide array of colorful veggies to boost the immune system. This salad makes for an amazingly healthy yet filling lunch that's full of all the vitamins your body needs to keep things going for the rest of the day!

Preparation

Cut the apple into bite-sized chunks and grate the carrot. Combine them with the greens, cabbage, nuts, and seeds.
Mix the lemon juice with tahini, maple syrup, minced ginger, salt, and water. Sprinkle the dressing on top of the salad. Top with freshly ground pepper.
Serve immediately. If taking this lunch to work, add the dressing and toppings right before eating to prevent the salad from going soggy.
