Ingredients


1 tablespoon extra virgin olive oil

1 onion (chopped finely)

1/2 cup carrot (chopped)

1/2 cup celery rib (chopped)

1 cup pumpkin (chopped)

1 cup baby spinach (leaves)

1/2 cup zucchini (optional)

1/2 cup broccoli (cut into small florets)

2 teaspoons garlic (minced)

1 tablespoon ginger root (fresh and minced)

1 teaspoon turmeric

1/2 teaspoon cinnamon (powder)

1/8 teaspoon cayenne powder (or to taste)

1 teaspoon yellow mustard seeds

3 cups vegetable stock (look for a gluten-free brand)

1/2 lemon (juice of half a lemon)

1/4 cup cherry tomatoes (halved or quartered)

Introduction

This colorful soup looks gorgeous, is extremely nutritious and tastes amazing. The combination of turmeric, cinnamon, ginger, cayenne and mustard seeds not only adds flavor but also aids digestion, purifies the blood and assists in cleansing the body throughout, making it a perfect detox soup. Feel free to add in different vegetables and play with the quantities as you wish. Serve it with chopped fresh coriander for an extra detoxifying boost.

Preparation

Saute the onion in the oil on medium heat until soft. Add the carrots, pumpkin and celery and continue to fry gently for a few minutes. Stir in all the other vegetables except the tomatoes. Add the garlic, ginger and spices and fry for a couple of minutes, ensuring that they don't burn.
Pour in the vegetable stock and simmer over medium-low heat for 25 minutes or so until all the vegetables are cooked.
Add lemon juice to taste and finally the cherry tomatoes.
