Ingredients


2 broccoli (heads)

1 tomato (ripe)

4 cups salad mix (or baby greens, or baby kale mix)

1 red onion

3/4 cup brown rice

1/4 cup raw cashews

3 tablespoons extra virgin olive oil

2 tablespoons lemons (squeezed)

Sea salt to taste

Black pepper to taste

Introduction

This incredible salad is probably one of the most nutritious meals you could feed your body. The vitamin C, sulfur and amino acids found in broccoli help detoxify the body, and the vitamin E and certain B vitamins contribute to keeping your skin glowing and healthy. Cashews will add healthy fats to your diet and contain copper, which helps keep your hair shiny and colorful.

Preparation

Bring the water to a boil and immediately add the rice and salt (use a ratio of 1 1/2 cups of water for each cup of rice). Cook on low to medium heat for 40-45 minutes.
Wash the broccoli very well and cut the stems off. Remove all the hard parts from the stems.
In a medium saucepan with lightly salted boiling water, cook the broccoli for 7-10 minutes. When tender, remove the broccoli from the heat, drain and wash with cold water to maintain its vibrant color and cool it quickly.
Peel and cut the tomato and red onion into small squares.
In a salad bowl, place the baby salad, rice, broccoli, tomato, onion and cashews.
Season with olive oil, lemon juice (or vinegar), salt and pepper.
