Ingredients

1 1/2 cups chickpeas (cooked or from a can)

4 tablespoons water

1/3 cup tahini paste

1 lemon (squeezed)

Sea salt to taste

1 pinch paprika (to granish)

1 carrot (small)

1 celery rib (single branch/rib)

2 tablespoons extra virgin olive oil

1 pinch cumin powder

Introduction

Eating vegetables as a snack might not be the first thing you think of, but eating these vegetable sticks with a homemade hummus dip is like a feel-good version of eating chips and dip! By making your own hummus, you can avoid all the unnecessary oil and additives, instead just enjoying all the goodness chickpeas have to offer: plant-based protein, protection from heart disease and cancer, and better control over your blood sugar levels. The veggies will not only add crunch but loads of vitamins and flavors too.

Preparation

In a food processor, mix the cooked chickpeas, olive oil, tahini, lemon juice, salt and water. Blend until the mixture is homogenous. Adjust the amount of water or lemon juice to achieve the desired consistency.
Drizzle with the olive oil and sprinkle with a pinch of paprika and cumin.
Wash and peel the carrot. Cut the veggies into sticks. Enjoy!
Portion size per snack: 2-3 tablespoons of the hummus dip.
