Ingredients


3 tablespoons chia seeds

1 cup almond milk

1 teaspoon pure vanilla extract

1 tablespoon pure maple syrup

1/2 banana

1 teaspoon goji berries (to garnish)

1 teaspoon desiccated coconut (to garnish)

Introduction

This is the perfect breakfast for those who are always running late in the morning but still want to get a super-healthy, detoxifying breakfast in. Chia seeds are an amazing source of antioxidants and were used by ancient civilizations (such as the Mayans and Aztecs) for their health benefits. Combine that with some vanilla extract, almond milk and fresh fruits, and you get the breakfast (or dessert) of the century: a fluffy, sweet pudding that is healthy, detoxifying and delicious all at once.

Preparation

In a bowl or jar, combine the chia seeds and almond milk. Stir well, then add the vanilla extract and maple syrup. Stir again.
Leave to set in the fridge overnight or for at least 6 hours.
Slice up the banana and add it on top along with the goji berries, shredded coconut and an extra drizzle of maple syrup. Enjoy!
