Ingredients


1 tablespoon ground flaxseed

2 tablespoons water

2 bananas

1/4 cup virgin coconut oil

1/4 cup pure maple syrup

2 1/2 cups oats (gluten-free if desired)

2 teaspoons cinnamon (ground)

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 cups frozen raspberries (or fresh)

1 teaspoon water

1 1/2 tablespoons pure maple syrup

1/2 teaspoon pure vanilla extract

1 1/2 tablespoons chia seeds

Introduction

These vegan raspberry oatmeal bars form a great healthy breakfast or guilt-free snack. This recipe does not use any refined sugar, instead getting its sweetness from the raspberries, bananas and maple syrup. Make this recipe gluten-free by using a certified gluten-free brand of oats.

Preparation

Preheat the oven to 350 degrees F or 180 degrees C.
Prepare the filling by adding 1 1/2 cups of raspberries, 1 tablespoon of water, 1/2 teaspoon of vanilla extract and 1 1/2 tablespoons of maple syrup to a saucepan. Simmer over medium heat. Stir regularly and cook until the berries start to become liquid (about 5-7 minutes). Once liquefied, bring the raspberry mixture to a boil and cook for 3 more minutes.
Stir the chia seeds into the mixture and cook for another minute. Then remove it from the heat and set it aside to cool and thicken while you prepare the oat bars.
Prepare your flaxseed egg by combining the flaxseed meal and water. Set it aside for 5 minutes to let it thicken.
Melt the coconut oil over low heat to make it liquid. In a large mixing bowl, combine the mashed bananas, liquid coconut oil and maple syrup with the flax egg (once it has thickened, of course).
Add half the oats to a blender to create an oat flour, keep the other half whole. Add both to the banana mixture. Add in the baking soda, baking powder and cinnamon and stir well to combine.
In a greased pan (8x8 is best for the quantities of this recipe), spread out 3/4 of the batter. Then add a layer of the raspberry-chia jam and top it off by crumbling the remainder of the batter on top. Bake in the oven for about 15-20 minutes or until golden brown. Let the bars cool completely before slicing into them.
