Ingredients


1 pineapple (fresh or from a can)

1 cup brown rice (uncooked)

3 tablespoons extra virgin olive oil

1/2 cup onion (chopped)

1 teaspoon garlic (minced)

1 teaspoon ginger root (minced)

1 cup red bell pepper

1/2 cup carrot

1/2 cup spring onion

1 cup green beans

1 teaspoon curry powder

2 tablespoons tamari soy sauce

1/3 cup raw cashews (for topping)

Sea salt to taste

Black pepper to taste

Introduction

This classic Thai pineapple fried rice is super easy to make, healthy, and so yummy. Have it as a main course or as a beautiful side dish.

Preparation

Cook the brown rice according to the instructions on the label. Reserve the rice.
Cut the pineapple in half lengthwise; scoop the flesh out, and cut it into cubes.
Cut all other vegetables into bite-size pieces.
In a large pan, heat the olive oil and cook the onion and green onions. Add garlic and ginger and stir for a few minutes, then add the carrot and beans; stir well. Cook for about five minutes over medium heat then add the red pepper.
Season with salt, black pepper,Tamari soy sauce(or soy-free coconut amino), cashews, and mix well.
Add the cooked brown rice, pineapple, and the curry powder, then mix well.
Adjust flavors and Tamari sauce to your liking and serve in a bowl or inside the pineapple skin.
