Ingredients


2 cups leeks (chopped)

1 broccoli (head)

3 1/2 cups water (or vegetable broth)

1 potato (peeled and cut into 2 cm pieces.)

1 teaspoon garlic (minced)

Sea salt to taste

Black pepper to taste

2 tablespoons nutritional yeast

Introduction

This easy soup recipe is perfect for when you're in desperate need of a dose of vitamins but don't want to spend half a century in the kitchen. Leek and broccoli make a perfect combination, and it also provides a good dose of calcium.

Preparation

Thinly slice the leek, and the garlic then saute them in a large pot.
Chop the broccoli head into crowns.
Add the water or vegetable broth to the pot along with the broccoli, potato, salt and pepper. Stir, then bring to a boil.
Reduce to a simmer, cover and cook for 20 minutes.
Puree the soup in small batches using a food processor or blender. Add the nutritional yeast and serve hot.
