This easy soup recipe is perfect for when you're in desperate need of a dose of vitamins but don't want to spend half a century in the kitchen. Leek and broccoli make a perfect combination, and it also provides a good dose of calcium.
|Thinly slice the leek, and the garlic then saute them in a large pot.|
|Chop the broccoli head into crowns.|
|Add the water or vegetable broth to the pot along with the broccoli, potato, salt and pepper. Stir, then bring to a boil.|
|Reduce to a simmer, cover and cook for 20 minutes.|
|Puree the soup in small batches using a food processor or blender. Add the nutritional yeast and serve hot.|
