Ingredients


1/4 cup black rice

3/4 cup water

1/2 cup coconut milk

1/2 tablespoon cinnamon

1/4 teaspoon nutmeg

Pure maple syrup to taste

Introduction

As delicious as oatmeal and smoothies are, they might start to bore you after a while. But what if you're still craving a sweet and satisfying breakfast with a mushy texture? Make a rice pudding! This coconut black rice pudding is full of delicious goodness and antioxidants, and it's been subtly sweetened with maple syrup. The texture is as satisfying as good old oatmeal, but achieving it with sticky black rice is a great way to mix things up at the breakfast table!

Preparation

Add the rice and plenty of water to a bowl. Soak overnight. If you don't get the chance to soak it, increase the cooking time to 45 minutes.
Add the water, coconut milk and rice to a saucepan and stir well. Bring to a boil over medium heat. As soon as the mixture starts to boil, reduce the heat and let it simmer for 25-30 minutes. To prevent the rice from getting too dry, add little splashes of water as you go along.
Add the cinnamon, nutmeg and maple syrup when the rice is as good as finished. Stir well. Leave it on the heat for another minute or two and take it off when the rice pudding reaches the desired texture.
Make sure to taste the pudding before serving, and add more maple syrup if needed! Top with fresh fruit slices and a swirl of coconut milk.
