Ingredients


1 cup broccoli

1/4 cup raw cashews (soaked and drained)

2 tablespoons almonds (chopped)

1 apple (red)

1/4 cup red onion (chopped)

1 tablespoon extra virgin olive oil

1 tablespoon lemon (squeezed)

1 tablespoon dried cranberries (unsweetened)

Sea salt to taste

Black pepper to taste

Introduction

This refreshing apple and broccoli salad is packed with health benefits. Broccoli is known to help with detoxifying the body and also keeps your skin and heart healthy. Apples are known to help reduce asthma symptoms, keep the heart healthy and reduce your risk of cancer. Last but not least, almonds are one of the best foods to eat for brain health and reducing cholesterol levels. Whichever ingredient you favor, you can't go wrong with this simple yet versatile salad.

Preparation

Wash the broccoli very well and cut the small stems off. Put it in a small pot and cover with water. Boil for 10 minutes or until the broccoli is tender. Drain and rinse with cold water so that the broccoli keeps its intense green color.
Wash and core the apple. Cut it into slices.
Peel the onion and cut it into very thin slices.
Throw the cashews in a food processor with 1 tablespoon of olive oil and lemon juice until smooth and creamy, Add a bit of water if needed and salt and pepper to taste.
Place the broccoli, apples and onions in a bowl and add the cashew dressing. Stir very well and finally top with the peeled almonds and dried cranberries.
