Mediterranean White Bean Salad

Ingredients


1 1/2 cups white kidney beans (canned or soaked overnight)

1/4 cup red onion

1 cup red bell pepper

1 celery rib (1 single branch/rib)

1/2 cup parsley (finely chopped)

1 tablespoon extra virgin olive oil

1/2 lemon (squeezed)

1 teaspoon garlic (minced)

Sea salt to taste

Black pepper to taste

Introduction

It is widely known by now that the Mediterranean diet is one of the healthiest in the world, and this salad definitely honors that statement. The white beans are full of antioxidants that will help your immune system and aid the detox process, and they also contain a high amount of fiber in addition to improving your cognitive abilities.

Preparation

If using dried beans, soak them overnight. The next day, wash the beans with running water, put them in a large pot, cover them with water and cook over medium heat for an hour or until the beans are soft. (If using canned Kidney beans, rinse and drain them well).
Wash, peel and cut the celery stems and red onion.
Wash the red bell pepper, cut it lengthwise and extract the seeds. Then cut it into three or four large pieces. In a hot pan with two tablespoons of olive oil, add the pieces of pepper and crush them with a slotted spoon. Roast them on both sides. Cook them covered for ten more minutes. Remove the pan from the stove and cut the pepper slices into smaller pieces.
Arrange all the ingredients in a salad bowl.
Mix all the ingredients for the salad dressing in a bowl. (Olive oil, lemon juice, garlic, salt, and black paper).
Add the salad dressing to salad when ready to serve.
