Ingredients


1 zucchini

1/4 cup raw cashews

1 cup cherry tomatoes (chopped)

1/4 cup carrot

1/2 cup red cabbage (chopped)

1/2 avocado (ripe)

1 tablespoon coriander

2 tablespoons extra virgin olive oil

1 lemon (squeezed)

Sea salt to taste

Black pepper to taste

Introduction

A mason jar salad is a great on-the-go lunch that's perfect for easily transporting your homemade vitamin boost and sticking to your healthy diet. This particular salad features zucchini, which can help you on your weight loss journey. If you're not looking to lose weight, zucchini is still a great vegetable for maintaining your optimal health! The dressing is based on avocado, which of course will provide you with the healthy fats you need, work as an anti-inflammatory agent and help you achieve smooth and glowing skin.

Preparation

Cut the zucchini and carrot into spirals. Cut the red cabbage into small pieces. Reserve the vegetables.
To make the dressing, throw all the ingredients (avocado, olive oil, lemon juice, coriander, salt and pepper) into a blender and pulse until combined.
Place the dressing in a mason jar. Then add the zucchini, tomatoes, red cabbage, carrot and raw cashews.
Cover the jars and refrigerate. Before eating, shake each jar or use a fork to mix the salad and proceed to serve it on a plate.
