Spinach and Leek White Bean Soup
For the healthiest yet tastiest dinner, try this spinach and leek white bean soup. |Finely chop the onion and leeks. Crush the garlic. Pour a drizzle of olive oil in a large pot on medium heat and saute the onion, garlic, and leeks. Stir until tender.|
|Add the vegetable stock, beans, thyme and bring to a boil. Reduce the heat to low, cover and simmer for 10-15 minutes. (If using dry beans, soak them overnight, and simmer for 1 hour).|
|Stir in the spinach and season the soup with salt and pepper. Serve immediately.|
