Ingredients


1 cup cannellini beans (canned,rinsed and drained)

1 onion

3 teaspoons garlic (chopped)

2 leeks (white and light green parts)

2 cups spinach (chopped)

4 cups vegetable stock (look for a gluten-free brand)

1 teaspoon dried thyme

Sea salt to taste

Black pepper to taste

Introduction

For the healthiest yet tastiest dinner, try this spinach and leek white bean soup. Spinach is an incredibly versatile health food that has many proven benefits, some of which include improved eyesight, strengthened muscles, increased metabolism and reduced inflammation. Leek is another disease-preventing veggie that will help you improve your digestive health and fight against heart disease. Finally, white beans add some great detoxifying properties to the soup as well as a nice and creamy bite!

Preparation

Finely chop the onion and leeks. Crush the garlic. Pour a drizzle of olive oil in a large pot on medium heat and saute the onion, garlic, and leeks. Stir until tender.
Add the vegetable stock, beans, thyme and bring to a boil. Reduce the heat to low, cover and simmer for 10-15 minutes. (If using dry beans, soak them overnight, and simmer for 1 hour).
Stir in the spinach and season the soup with salt and pepper. Serve immediately.
