Ingredients


1 tablespoon ground flaxseed

1 sweet potato (medium)

1 1/2 cups black beans (cooked or ¾ of 400g can)

3 spring onions (finely chopped)

1 cup brown rice (cooked)

1/4 cup coriander (leaves finely chopped)

1/2 cup walnut (finely chopped)

2 teaspoons cumin powder

1 teaspoon paprika

1/4 teaspoon chili powder

Sea salt to taste

Black pepper to taste

1 tablespoon extra virgin olive oil

Introduction

This is a delicious and nutritious burger packed with flavors. It's super-simple to make and full of fiber, protein and iron.

Preparation

Preheat the oven to 400 degrees F or 200 degrees C.
Peel and dice the sweet potatoes, toss with 1 tbsp. olive oil and pinch salt/pepper. Add sweet potatoes to a baking pan and roast for 20-30 minutes until soft
While the potatoes are cooking, make the Brown rice. Set aside.
Make a "flax egg" by mixing the flaxseed with 2 tablespoons of water and leave the mixture to stand for 10 minutes.
Rinsed and drained the black beans. Add them to a mixing bowl and mash half of them for texture. Then add sweet potato and lightly mash, then add 1 cup of cooked rice, spring onion, coriander, chopped walnut, flax egg, and spices.
Mix to combine. Taste and adjust seasonings as needed. Add more rice or nut meal if the mixture feels too wet.
Mold the mixture into burger patties.
Place them carefully on a baking tray and bake them in the oven for about 30 minutes (flipping sides after 20 mins) until they're light brown and crunchy.
Serve the burgers alongside a green salad or in a gluten- and dairy-free burger bun with some lettuce, tomato, onion, avocado, and hummus.
