Potato and Pea Curry
Spice up tonight's dinner with this Indian dish full of vibrant flavors and spices. This curry is packed with fiber, which will help keep you full and your digestion going strong, as well as vitamins A and C, potassium and iron. Serve it with brown rice to fill you up some more and get those healthy vitamins and nutrients that white rice is lacking!
|Wash and peel the potatoes. Dice the potatoes and tomatoes and preserve them.|
|Finely chop the onion and garlic. Pour the olive oil in a frying pan on low heat. When the oil is hot, add the onion and cook for 2-3 minutes. Then add the garlic and cook for 3 more minutes.|
|Increase the heat to medium and add the bay leaf. Cook for about 2 minutes. Immediately add the rest of the ingredients in the following order: first the seasoning (garam masala, chili, turmeric, cumin and ground coriander), then the tomatoes, salt and potatoes.|
|Add the water (preferably hot) to the pan. Cover and let it boil. Turn the heat to low and cook the curry until the potatoes are soft (around 25 minutes). Then add the peas for a few more minutes. Taste and adjust the seasoning.|
|Remove the pan from the heat and serve the curry with brown rice. Enjoy!|
