Ingredients


1 cup chickpeas (cooked or from a can)

1 tablespoon extra virgin olive oil

Sea salt to taste

3/4 teaspoon turmeric

1/4 teaspoon garlic powder

1/2 tablespoon nutritional yeast

Introduction

Finally, a snack you don't need to feel guilty about munching on! These crunchy, flavor-filled chickpeas are moreish and delicious yet full of protein and fiber for that essential energy boost throughout the day. They can even be added to soups or salads for a yummy crunch and pop of flavor. Store them in an airtight container and they should last about a week.

Preparation

Preheat the oven to 400 degrees F or 200 degrees C.
Place the drained chickpeas onto a clean tea towel and rub them vigorously to remove any excess water and dislodge the chickpea skins. Throw away as many skins as you can, as this helps to ensure a crunchy texture.
Put the chickpeas in a baking dish and toss them well with the oil. Cook them in the oven for around 20 minutes, shaking the pan once or twice to prevent any burning.
Remove the tray from the oven and mix in the turmeric, salt and garlic powder.
Place the tray back in the oven, cook for a few more minutes and then turn the oven off. Leave the chickpeas in there for another 10 minutes, as this helps to dry them out and make them especially crunchy.
Remove the chickpeas from the oven, toss them with nutritional yeast and enjoy!
FYI: 1 serving size is a 1/3 cup of chickpeas (save some for later).
