Ingredients


1/2 cup red bell pepper

1 cup broccoli

2 spring onions

1 teaspoon garlic (finely chopped)

1 tablespoon ginger root (fresh and minced)

1 cup green beans (cut diagonally)

1/2 cup carrot

1 cup mung bean sprouts

2 tablespoons roasted peanuts

2 tablespoons virgin coconut oil

6 tablespoons tamari soy sauce

2 tablespoons pure maple syrup

2 teaspoons pure sesame oil

1 tablespoon lemon (squeezed)

250 grams rice noodles (gluten-free)

Introduction

A classic Thai dish, this Pad Thai is packed with flavor, loaded with vegetables and sure to impress your family and friends.

Preparation

Prepare the noodles according to their instructions, until just tender (al dente). Drain, refresh in cold water and drain again.
Mix all sauce ingredients (Tamari soy sauce, maple syrup, sesame oil, and lemon) and set aside.
Cut the red capsicum, chili and spring onion into short strips.
Cut the broccoli stems and separate into florets.
Peel the carrot and cut it into ribbons or use a spiralizer.
Bring water to a boil and cook the green beans for 3 minutes.
Heat one tablespoon of coconut oil in a wok or a large frying pan. Once hot add the spring onions, garlic, ginger and chili; constantly stir until fragrant, then transfer into a separate plate.
Heat up another tablespoon of coconut oil in the same wok (no need to wash it). Start adding the prepared veggies in the following order (leaving a minute or two between each addition): broccoli, red capsicum, green bean, and carrot ribbons. Stir until cooked but still crunchy.
Transfer all the vegetables onto a large plate leaving the sauce in the wok/frying pan. Add the noodles and give them a good stir with the sauce. Add spring onions, chili, garlic then stir again.
Add the mung bean sprouts, mix well and let it heat up while stirring for a minute or two.
Sprinkle with chopped or crushed peanuts and serve with lime wedges on the side.
