Ingredients


1/2 cup spinach (or baby spinach)

1/2 cup lettuce

1/2 cup green rocket leaves

1 red bell pepper

1 apple

3 spring onions

1/2 avocado

1/4 cup raw cashews

1 tablespoon pure sesame oil

1 tablespoon coriander (for granish)

1/4 cup coconut milk

3 tablespoons lemons (squeezed)

1 tablespoon pure maple syrup

1 tablespoon organic almond butter

2 teaspoons coconut aminos soy-free sauce

Introduction

This Thai salad is packed full of fresh, crunchy veggies and combines beautifully with the creamy coconut dressing. Mango would go great with this salad too, but if it's not in season, you can stick with a nice apple to give this salad a touch of sweetness.

Preparation

Throw all the salad ingredients together into a bowl, making sure you reserve the sesame seeds to sprinkle specifically on the avocado (they make an amazing pair).
To make the dressing, throw all the ingredients together (coconut milk, lemon juice, maple syrup, almond butter, liquid amino) into a blender and pulse until combined. You can leave it to thicken in the fridge for an hour or two if desired.
Drizzle the dressing on the salad and garnish with some fresh coriander.
